The Center is a mainly research institution which forms part of the Karolinska Institutet, and is within the Department of Biosciences. It also engages in public health nutrition teaching.
Vitamin and Mineral Toxicities in Adults
Detailed lay article (from Nebraska Extension catalogue of publications) which outlines the nutrients, symptoms and possible doses required to produce micronutrient toxicity. Unfortunately the most important table is not properly aligned, which makes it a little harder to read, but the information is good nonetheless.

This is a government web site for guidelines of various sorts, some of which relate to nutrition.
NetBiochem
Short summaries of metabolic pathways from a medical biochemistry site. Many have graphics, and some have sound or animation files included. Topics are fairly comprehensive over the range of amino acid, carbohydrate and lipid metabolism and include: fatty acid, haem / heme and iron, membranes, nucleic acids, purines and pyramidines. As well as the straight biochemistry, there is a section with notes for an introductory course in nutrition.
