General Extension material

Note: for non-American visitors, it may be helpful to know that the concept of Extension in the USA applies to educational and other outreach activities in a range of areas involving food, food safety, agriculture and other home and family activities.

These have historically been carried on in colleges and universities which benefitted from a 1890 Land-Grant program, and the departments are known as Extension or Cooperative Extension universities and departments.

USDA: Cooperative State Research, Extension Service
This organisation provides support services for agricultural universities and cooperative extension. The web site has organisational details and information about its programs, which include food, food safety and nutrition:

Journal of Extension
An all electronic peer-reviewed journal of the U.S. Cooperative Extension System.
The MAD Scientist Network
Collection of scientists administered from Washington University School of Medicine. They provide on-line answers to young (and other!) people's questions about anything to do with science, which can include nutrition and food subjects. Very worthwhile project.

Colorado State Cooperative Extension Food Publications
This Cooperative Extension department has a large list of on-line publications, in areas of food safety, health and guidelines, and food preparation and preservation. Many are in PDF format.

University of Alaska Cooperative Extension
Newsletter and over 300 publications, though this covers the whole Extension range, not just nutrition. Many available on-line in Acrobat format.
University of Arkansas Cooperative Extension
Family and consumer section but not much nutrition or food information.
University of California at Davis Cooperative Extension
Both food and nutrition covered,with on-line publications. Some are in Spanish.
University of Delaware
Moderate set of nutrition, food safety and preparation resources in plain text format.
University of Florida Cooperative Extension
Academic program information, links. Otherwise most resources are for ordering, not downloading.
University of Georgia Cooperative Extension
The site is nicely laid out, and has newsletter, links and about two dozen food science and nutrition publications (in plain text listed by subject and title.)
University of Idaho Extension
Mostly agricultural news and resources.
University of Illinois at Urbana Champaign Extension
Good range of lay nutrtion resources from this extension department, with special sections on food preparation and the elderly. The documents are in Acrobat (.pdf) format, which makes them a good resource to print off, for example a nice dietary pyramid.
Kansas State: Extension Foods and Nutrition
One of the most together Extension Department web sites around. It features as well as the wonderful list of other university Extension Departments' resources (see above) its own newsletter F&N Digest, extensive list of on-line lay nutrition pamphlets (in Acrobat format), links to more than 350 general nutrition web sites, cupboard and fridge storage charts, and ingredient substitution information.

Michigan State Extension
List of resources and data base material from the general range of extension, which include both agricultural and nutrition, and a searchable Michigan State Univ. Extension Food & Nutrition Bulletin.
University of Minnesota Extension
Very interesting site, with lots of information related to local Minnessota agricultural issues, as well as more general food topics.
University of Missouri ,Columbia Extension
Excellent collection of extension material includes:

  • Food and Nutrition Guides
  • Food preservation information
  • National Health days calendar

    University of Nebraska Extension Publications
    There really is an extensive collection here, and although some of the translation from printed to web versions may have been a bit rough, it is a very good resource to turn to.

    One particular feature is FoodTalk, an email newsletter which provides "a short "how-to" message on food, nutrition, or food safety for health professionals, educators, and consumers."

    Ohio State University Extension Service: Ohioline
    Lots of factsheets in the areas of food, food safety, healthy eating. Includes sections for children, women, pregnancy etc. Also has news section, serach engine and an Extension bulletin with a more agricultural flavour.

    Oregon State Extension Service
    Particular focus on giving educators skills in working with low income and low literacy groups, the site contains a small number of annotated links, brief fact sheets on nutrition topics.

    Purdue University Cooperative Extension
    Wide range of food safety materials as well as around 30 general family nutrition pamphlets. The publications available on these topics are in Acrobat format.

    Purdue web site is also home to Safe Food For the Hungry, an annual conference for staff and volunteers of not-for-profit food assistance programs.

    Virginia Cooperative Extension - Food & Nutrition Newsletter
    Plain text, but with subject based index to get the most out of these monthly newsletters with short paragraph style general nutrition information, news etc.
    Washington State University Extension
    Educational materials, conferences and programs as well as departmental information. Resources tend to the food more than nutrition area, and there are specific K4 materials. They are available in normal web format as well as Acrobat.
