Codex Alimentarius Commission

This is the FAO/WHO body concerned with food standards, including additives and pesticides in foods, allowable limits, micronutrient supplementaton etc. On their web site you will find "information about the Codex Alimentarius and the Joint FAO/WHO Food Standards Programme. You will also find information about current events and forthcoming Codex meetings (including working papers), reports and summary reports of recently held Codex meetings"

US based organisation with focus on food safety through hand washing.

Environmental Health Information Service

On-line journal and information site with plenty of nutrition relevance, including information on toxins and carcinogenic substances in food.

A "partnership between government, industry, consumer and professional associations, was established in early 1997." Pick of the crop National Food Safety Database Excellent resouce for food safety. This is a project "to develop an efficient management system of US food safety databases that are used by the Cooperative Extension Service, consumers, industry, and other public health organizations." It is primarily funded by the USDA. The web site has consumer, industry and educator food safety materials listed, and a search engine.

Institute of Medicine, Food and Nutrition Board Reports on food safety and food law

Series of reports on various matters of food safety, labelling, RDIs and other aspects of nutrition. Most of them can be read on-line through the excellent National Academy Press `Reading Room'.
